Wild Rice Mushroom Soup

Ingredients:

  • Soup:
    • 1 cup wild rice
    • 8 oz Cremini mushrooms, sliced
    • 2 carrots, diced
    • 2 celery stalks, chopped
    • 1 onion, chopped
    • 5-6 garlic cloves, minced
    • 4 cups vegetable broth
    • 4 oz kale, chopped
    • 3-4 sprigs fresh thyme or 1 tsp dried thyme
    • 1-2 sprigs fresh rosemary or 1 tsp dried rosemary
    • 1 bay leaf
    • Pinch of nutmeg
    • Salt and pepper to taste
  • Roux:
    • 4 tbsp butter (or vegan butter/oil)
    • 1/4 cup flour
    • 2 cups milk (or plant-based milk)
