Wild Rice Mushroom Soup

Instructions:

Instant Pot:

  1. Prepare Soup: Add all ingredients except kale to Instant Pot. Pressure cook on high for 30 mins. Natural release for 10 mins.
  2. Make Roux: Melt butter in a saucepan, add flour, sauté 1 min. Whisk in milk, simmer 2-3 mins.
  3. Finish Soup: Open Instant Pot, discard bay leaf and herb sprigs. Sauté mode, add kale, roux, and nutmeg. Simmer 3-5 mins.
  4. Serve: Enjoy with salad and bread.

Stovetop:

  1. Prepare Soup: In a pot, add all ingredients except kale. Boil, then simmer 45-50 mins.
  2. Make Roux: Melt butter in a saucepan, add flour, sauté 1 min. Whisk in milk, simmer 2-3 mins.
  3. Finish Soup: Discard bay leaf and herb sprigs. Add kale, roux, and nutmeg. Simmer 3-5 mins.
  4. Serve: Enjoy with salad and bread.
