Albondigas Soup

Ingredients:

For the Meatballs:

  • 450 g (1 lb) lean ground beef
  • ¼ cup (50 g) long-grain rice
  • 1 egg
  • 2 garlic cloves, minced
  • 3 tbsp fresh cilantro, chopped
  • 2 tbsp fresh mint, chopped
  • 1 tbsp fresh oregano, chopped
  • ½ tsp salt
  • ¼ tsp black pepper

For the Soup:

  • 2 tbsp olive oil
  • 1 onion, diced
  • 1 carrot, diced
  • 2-3 celery stalks, diced
  • 2 garlic cloves, chopped
  • 250 g (1½ cups) potatoes, cubed
  • 1 zucchini, cubed
  • 150 g (1 cup) green beans, sliced
  • 330 ml (1½ cups) tomato sauce
  • 2 tbsp fresh oregano, chopped
  • 1.5 liters (6 cups) beef stock
  • Fresh cilantro, chopped (for garnish)
  • Salt and pepper to taste
