For the Meatballs:
- 450 g (1 lb) lean ground beef
- ¼ cup (50 g) long-grain rice
- 1 egg
- 2 garlic cloves, minced
- 3 tbsp fresh cilantro, chopped
- 2 tbsp fresh mint, chopped
- 1 tbsp fresh oregano, chopped
- ½ tsp salt
- ¼ tsp black pepper
For the Soup:
- 2 tbsp olive oil
- 1 onion, diced
- 1 carrot, diced
- 2-3 celery stalks, diced
- 2 garlic cloves, chopped
- 250 g (1½ cups) potatoes, cubed
- 1 zucchini, cubed
- 150 g (1 cup) green beans, sliced
- 330 ml (1½ cups) tomato sauce
- 2 tbsp fresh oregano, chopped
- 1.5 liters (6 cups) beef stock
- Fresh cilantro, chopped (for garnish)
- Salt and pepper to taste
