Albondigas Soup

Instructions:

  1. Make Meatballs: Mix ground beef with rice, egg, garlic, cilantro, mint, oregano, salt, and pepper. Shape into meatballs and refrigerate.
  2. Prepare Soup Base: Heat olive oil in a large pot. Sauté onion, carrot, and celery for 8-10 minutes until softened. Add garlic and cook for 1 more minute.
  3. Cook Soup: Add potatoes, zucchini, green beans, tomato sauce, oregano, and beef stock. Bring to a boil. Reduce heat, add meatballs, and simmer with the lid on for 20 minutes.
  4. Finish and Serve: Stir in fresh cilantro, season to taste, and serve hot.
