Broccoli Cheddar Soup

Ingredients

  • 1/4 cup melted butter
  • 1/2 medium onion, chopped
  • 1/4 cup flour
  • 2 cups half-and-half cream
  • 2 cups chicken stock or broth
  • 1/2 lb broccoli (about 3 cups), chopped
  • 1 cup carrot, julienned (or matchstick carrots)
  • 1/4 tsp nutmeg (optional)
  • 8 oz sharp cheddar cheese, grated (2 cups)
  • Salt and pepper
