VEGGIE LENTIL SOUP INSTANT POT

Ingredients:

  • 1 medium onion, diced (about 1 1/2 cups)
  • 2 carrots, sliced (about 1 1/4 cups)
  • 2 celery stalks, diced (about 1 cup)
  • 1 medium white potato, diced (about 1 1/2 cups)
  • 3 cloves garlic, minced
  • 1 (28 oz) can diced tomatoes
  • 1 1/2 cups dried brown lentils, rinsed
  • 1 1/2 teaspoons Italian seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon lemon pepper
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 1/2 teaspoons lemon juice
  • 1 tablespoon balsamic vinegar
  • 5 cups vegetable broth, divided
  • Salt and pepper, to taste
  • Additional broth to thin soup after cooking
