Vegetarian Dumpling Soup

 

Instructions:

  1. Prepare Dumplings:
    • Beat eggs in a bowl.
    • Gradually add semolina and salt, mixing until smooth. Set aside.
  2. Make the Soup:
    • Heat olive oil in a large pot over medium heat.
    • Sauté onion for 3-4 minutes until softened.
    • Add carrot and leek, cook for 4-5 minutes, stirring occasionally.
    • Stir in garlic, rosemary, and thyme, cooking for another minute.
    • Add potatoes and stock, bring to a boil, then simmer for 10-15 minutes until potatoes are tender.
  3. Cook Dumplings:
    • Ensure the soup is simmering.
    • Drop spoonfuls of dumpling mix into the soup.
    • Simmer for 5 minutes until dumplings float to the top.
    • Turn off heat, cover pot, and let rest for 10 minutes.
  4. Serve:
    • Garnish with fresh parsley and serve hot.
