Vegetable Orzo Soup

Ingredients:

  • 1 tablespoon olive oil (optional)
  • 4 garlic cloves, minced
  • 1 cup dry orzo pasta
  • 2 cups frozen mixed vegetables
  • 1 cup cooked garbanzo beans, rinsed and drained
  • 1 (16 oz) can fire-roasted diced tomatoes
  • 3 cups low-sodium vegetable broth or water
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Optional Garnishes:

  • ¼ cup freshly grated parmesan cheese or nutritional yeast
  • ¼ cup chopped fresh herbs (basil or parsley)
  • Red pepper flakes
