Ingredients:
- 1 tbsp olive oil
- 1 lb Italian sausage, casings removed
- 1 small onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 1 (8 oz) can tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- 1 (9 oz) package cheese tortellini
- 3 cups fresh spinach, packed
- 1/2 cup heavy cream
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Preparation:
- Heat the olive oil in a large soup pot over medium heat. Add the sausage and cook until browned, breaking it up with a spoon as it cooks.
- Add the diced onion and minced garlic to the pot. Cook until the onion is soft and translucent, about 3-4 minutes.
- Stir in the chicken broth, diced tomatoes, tomato sauce, dried basil, dried oregano, and crushed red pepper flakes (if using). Bring the mixture to a boil.
- Add the tortellini to the pot and cook according to the package instructions, usually about 7-8 minutes.
- Reduce the heat to a simmer and stir in the fresh spinach. Cook until the spinach is wilted, about 2 minutes.
- Stir in the heavy cream and season the soup with salt and pepper to taste.
- Serve the soup hot, topped with grated Parmesan cheese.
