Northern Bean and Sausage Cassoulet

Instructions:

  1. Prep Beans:
    • Rinse beans, remove debris, and soak overnight or use quick soak method (boil, then soak for 1 hour). Drain and rinse.
  2. Cook Sausage:
    • In a large Dutch oven, heat oil over medium heat. Brown sausage slices, then remove and set aside.
  3. Sauté Vegetables:
    • In the same pot, sauté onion, carrots, celery, and garlic until tender and onion is translucent.
  4. Add Ingredients:
    • Stir in tomato paste and cook for 1 minute. Add beans, sausage, broth, bay leaf, thyme, and rosemary. Stir well.
  5. Simmer:
    • Bring to a boil, reduce heat to low, cover, and simmer for 1.5 to 2 hours, until beans are tender. Stir occasionally, adding more broth or water if needed.
  6. Finish and Serve:
    • Remove bay leaf and season with salt and pepper. Serve hot, garnished with parsley.
