LENTIL VEGETABLE SOUP

Ingredients:

  • 2 tbsp extra virgin olive oil
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 stalk celery, chopped
  • 1 tsp cumin
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 cans (15 oz each) diced tomatoes
  • 1 cup uncooked lentils (green or brown)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1½ tsp salt, or more to taste
  • ¼ tsp black pepper or red pepper flakes
  • 5 oz spinach (about 4-5 cups)
