Kielbasa And Sauerkraut Soup

Instructions:

  1. Melt butter over medium heat in a large pot. Add chopped onions and sauté until translucent, about 5 minutes.
  2. Stir in garlic powder, paprika, salt, and pepper. Cook until fragrant, about 1 minute. Add sliced kielbasa to the pot.
  3. Pour chicken broth into the pot and bring to a simmer. Use 4 cups for a thicker soup or 6 cups for a thinner consistency.
  4. Add sauerkraut, bay leaves, and kidney beans. Cook for about 10 minutes or until beans are tender and flavors are well blended.
  5. Remove bay leaves before serving. Drizzle each serving with olive oil.
