Instructions
- Sauté Onions and Garlic: Heat a large pot over medium heat, add a drizzle of olive oil, and sauté the diced onion until translucent. Add minced garlic and cook for another minute.
- Cook Vegetables: Add diced carrots, potatoes, and celery to the pot. Stir and cook until the vegetables start to soften.
- Add Tomatoes and Beans: Pour in the diced tomatoes (including juice) and kidney beans. Stir to combine.
- Simmer Soup: Add broth and bay leaf. Bring to a boil, then reduce heat to low and simmer for 20-30 minutes until vegetables are tender.
- Add Optional Vegetables: If using corn, green beans, or peas, add them during the last 10 minutes of cooking.
- Season and Serve: Season with salt and pepper to taste. Remove the bay leaf before serving.
