Easy Italian Meatball Soup

Instructions:

  1. Prepare Meatballs: Preheat oven to 190°C (375°F). Mix beef, garlic, herbs, egg, Parmesan, breadcrumbs, salt, and pepper. Shape into 1½ inch meatballs and place on a baking sheet. Spray with oil and bake for 15 minutes until golden.
  2. Cook Soup Base: Heat olive oil in a pot over medium heat. Sauté onion, carrot, and celery for 7-8 minutes. Add garlic and cook for 1 more minute. Stir in crushed tomatoes, beef stock, and oregano. Bring to a boil, then simmer for 10 minutes.
  3. Add Pasta: Add pasta to the pot and cook for 10-12 minutes until al dente. Add baked meatballs, parsley, and Parmesan. Season to taste.
  4. Serve: Enjoy on its own or with crusty bread.
