Creamy Hungarian Mushroom Soup

Instructions:

  1. Cook Aromatics: Melt butter in a large pot over medium heat. Sauté onion until soft, about 5 minutes. Add mushrooms and cook until browned, 5-10 minutes.
  2. Add Spices: Stir in garlic, paprika, dill, and tamari. Cook for 2 minutes.
  3. Simmer: Add vegetable stock and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Thicken Soup: In a bowl, whisk milk and flour until smooth. Stir into the pot and cook until thickened, 5-10 minutes.
  5. Finish Soup: Remove from heat. Stir in lemon juice. Mix sour cream with a bit of hot soup, then gradually stir back into the pot. Season with salt and pepper.
  6. Serve: Serve hot, garnished with extra dill or a dollop of sour cream if desired.
