Chicken Rice And Mushroom Soup

Ingredients:

  • 2 large boneless, skinless chicken breasts, cooked and shredded
  • 2 cups long grain rice, cooked according to package instructions
  • 8 oz mushrooms, quartered
  • 1/2 yellow onion, diced
  • 2 celery stalks, diced
  • 2 carrots, peeled and diced
  • 3 cloves garlic, minced
  • 1 teaspoon chopped thyme
  • 6-8 cups chicken broth
  • 1/4 cup all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Kosher salt and black pepper
