Chicken and Dumplings

Instructions:

  1. Prepare the Soup: Melt butter in a large pot over medium heat. Add onion, carrots, celery, and garlic. Cook until vegetables soften, about 5 minutes. Sprinkle flour over vegetables and stir for 1 minute. Add chicken broth, chicken, thyme, parsley, bay leaf, salt, and pepper. Bring to a boil, reduce heat, and simmer for 10 minutes.
  2. Make the Dumplings: In a medium bowl, whisk together flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk until a soft dough forms.
  3. Cook the Dumplings: Drop dough by tablespoonfuls into the simmering soup. Cover and cook for 15 minutes.
