Methods:
- Cook Bacon:
- Add bacon to a soup pot and cook until crispy. Remove and set aside. Drain most of the bacon fat, but do not clean the pan.
- Sauté Vegetables:
- Return the pot to medium heat, add onion, celery, and carrots. Cook for 2 minutes.
- Add Potatoes and Seasonings:
- Add diced potatoes, salt, pepper, and any additional seasonings. Stir well.
- Add Broth:
- Pour in the broth and bring to a low boil. Cook for 10 minutes or until potatoes soften.
- Thicken Soup:
- Whisk flour (or cornstarch) with milk, then add to the pot while stirring continuously. Cook for another 5 minutes.
- Blend Soup:
- Scoop out ¼ to ½ of the soup and blend until smooth. Slowly add back to the pot, stirring carefully.
- Finish and Serve:
- Stir in crumbled bacon, reserving some for garnish. Serve in bowls with parsley, bacon, and grated cheese.
