BEST HOMEMADE POTATO SOUP

Methods:

  1. Cook Bacon:
    • Add bacon to a soup pot and cook until crispy. Remove and set aside. Drain most of the bacon fat, but do not clean the pan.
  2. Sauté Vegetables:
    • Return the pot to medium heat, add onion, celery, and carrots. Cook for 2 minutes.
  3. Add Potatoes and Seasonings:
    • Add diced potatoes, salt, pepper, and any additional seasonings. Stir well.
  4. Add Broth:
    • Pour in the broth and bring to a low boil. Cook for 10 minutes or until potatoes soften.
  5. Thicken Soup:
    • Whisk flour (or cornstarch) with milk, then add to the pot while stirring continuously. Cook for another 5 minutes.
  6. Blend Soup:
    • Scoop out ¼ to ½ of the soup and blend until smooth. Slowly add back to the pot, stirring carefully.
  7. Finish and Serve:
    • Stir in crumbled bacon, reserving some for garnish. Serve in bowls with parsley, bacon, and grated cheese.
