Beef Soup Recipe

Instructions

  1. Sprinkle beef with 3 tsp salt. Heat 2 Tbsp oil in a dutch oven or soup pot over medium-high heat. Brown beef in batches. Set aside.
  2. In the same pot, add more oil if needed, and sauté chopped onion and celery for 5 minutes until softened.
  3. Add canned tomatoes (with juice), 4 cups broth, 4 cups water, 2 bay leaves, and browned beef. Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
  4. Add 1/2 cup rice, 2 Tbsp lemon juice, 2 pressed garlic cloves, 1 tsp coriander, and 1 tsp paprika. Cover and simmer for 20 minutes until rice is tender.
  5. Remove from heat, stir in 1/4 cup parsley and 1/4 cup dill, cover, and let sit for 10 minutes. Adjust seasoning with salt and pepper.
  6. Serve with additional fresh parsley and dill as desired.
