Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 medium potatoes, peeled and cubed
- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
- 4 cups vegetable broth
- 1 cup coconut milk (or any plant-based milk for a creamy texture)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon ground turmeric (for color)
- 2 bay leaves
- Salt and pepper to taste
- 1 cup fresh parsley or cilantro, chopped
