Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 medium potatoes, peeled and cubed
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 1 cup coconut milk (or any plant-based milk for a creamy texture)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon ground turmeric (for color)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 cup fresh parsley or cilantro, chopped
