Caldo de Res (Beef Soup)

 

Ingredients:

  • 2 lbs beef shank or beef short ribs, cut into chunks
  • 1 large onion, quartered
  • 4 garlic cloves, minced
  • 8 cups beef broth or water
  • 2 large carrots, cut into chunks
  • 3 ears of corn, cut into pieces
  • 2 medium potatoes, peeled and cut into chunks
  • 1 chayote squash, cut into chunks
  • 2 zucchini, cut into chunks
  • 1/2 head of cabbage, cut into wedges
  • 1/2 bunch cilantro, chopped
  • 1 tbsp salt (or to taste)
  • 1 tsp black pepper
  • 1 lime, cut into wedges
  • Corn tortillas, for serving
